It’s been 29 years since Francesco Cincinnato, whom everyone calls “Franco”, is at the service of the Brasserie de Silly. An article will obviously not be enough to summarize as many brilliant years of activity, rich in anecdotes and multiple encounters.
It’s Monsieur José as he always called (José Van der Haegen, today deceased) who hired him, which allowed him to know 3 generations of brewers. Franco has learned everything on the job but has developed an expertise that makes him essential in the process of making our beers.
Today, his position in production: Filtration and packaging.
His leitmotiv < in the work: rigor and cleanliness.
One not going without the other.
With his many years at the Brasserie de Silly, he says he is proud of the road traveled, professionalization and modernization of it. According to him, this is not the same brewery as it started.
To conclude, Franco delivers us his favorite beer: The Scotch of Silly.
