Wow, what a great weekend. I got to spend my Saturday watching my sister marry her best friend and I couldn’t have been more grateful for them to invite me to be a part of it. So much so, that after some careful thought and a perfectly timed empty fermentor, I was fortunate enough to be able to make a limited batch of beer to go along with the celebration. Inspired by some of the couple’s favorite flavors in beer and wishes of a bright future in mind, it’s my honor to present to you our sour pale ale, Forever Navigator.
As it’s introduced, I set out to make a beer that embodies a bright future for the happy couple; bright color, bright aroma, and bright flavor. To craft this, I’ve taken what we’ve learned from our kettle sour program with our Kill Your Idles series and combined it with our IPA program from the Seams and Change Up series. I started by kettle souring the wort before it was fermented with our house IPA yeast for that tart flavor. Then, after fermentation, the beer was dry hopped with equal amounts of Simcoe, El Dorado and Galaxy; and supported by just a bit of Ekuanot and Palisade. This combination helps to bring out flavors and aromas of ripe mangoes, passionfruit, and fresh squeezed orange juice.
With a little extra carbonation and just enough residual sweetness, this beer feels almost like drinking a mimosa. Delicate enough to pair well with soft ripened cheeses but still assertive enough in flavor and aroma to stand up to and be served with slow cooked barbecue.
