Cooking Instructions

- Heat oil in a large pan over medium heat
- Add chicken pieces, season with salt and pepper
- Cook 4–5 minutes until seared on the outside, tossing frequently
- Remove chicken to plate and set aside

- Add oil to the pan if needed
- Add onion, bell pepper and cook until softened, about 3-4 minutes
- Stir in garlic and ginger; cook 1 minute until fragrant

- Add curry, turmeric, paprika
- Stir and cook for 30 seconds until fragrant
- Return chicken to the pan, tossing in spice blend

- Add tomato paste
- Add coconut milk and chicken broth (or beer)

- Bring to a simmer and cook uncovered for 12–18 minutes until the sauce thickens and chicken is tender
- Add salt, sugar, or more curry powder if needed.

- Squeeze fresh lime juice over dish
- Garnish with fresh cilantro
- Serve over rice
