Brasserie la Botteresse de Sur-les-bois is a Belgian brewery in Saint-Georges.

History

February 1996 marks the beginning of the brewing adventures of the two cousins ​​Willy and José. One is a former brewer (Willy) and the other is a chemical technician (José).
This association will enable them to combine the know-how of the brewer with the scientific precision of the laboratory.

Two years of research, testing and tasting will lead them to develop their first beer: La Botteresse Ambrée. The brewery of Les Bruyères was born. What was for them a simple hobby will gradually transform into a regular production although very low (60hl / year). All the equipment used is first-quality material all in stainless steel constructed according to their own plans (mechanical stirring, thermal regulation, manufacturing follow-up).

The brews produced were 100 liters. The main concern of our two brewers was the quality and not the quantity and they brew high-density beers rich in aromas and flavors. They were fermented in 75 cl bottles and matured in the cellar before being offered for tasting.

The brewers envisaged an increase in production only by retaining the characteristics and qualities of a craft beer, that is to say: fermentation in small tanks, use of barley in crushed grains, The hop flower, the candy sugars, the selected yeasts and respecting long periods of fermentation, keeping and maturation.

The 100-liter brewers no longer meet the demand. In 2005, the brewery moved into new workshops in the small village of Sur-Les-Bois in the commune of St Georges. The brewery of the Bruyères SNC becomes the brewery La Botteresse of Sur-Les-Bois SCRL.

A year of installation and development later, the first 1000 liters brassins come out of the tanks in February 2006.
