Coconut Chicken Curry

Cooking Instructions

  • Sear the chicken
      • Heat oil in a large pan over medium heat
      • Add chicken pieces, season with salt and pepper
      • Cook 4–5 minutes until seared on the outside, tossing frequently
      • Remove chicken to plate and set aside
  • Sauté the aromatics
      • Add oil to the pan if needed
      • Add onion, bell pepper and cook until softened, about 3-4 minutes
      • Stir in garlic and ginger; cook 1 minute until fragrant
  • Add the spices
      • Add curry, turmeric, paprika
      • Stir and cook for 30 seconds until fragrant
      • Return chicken to the pan, tossing in spice blend
  • Make the sauce
      • Add tomato paste
      • Add coconut milk and chicken broth (or beer)
  • Simmer
      • Bring to a simmer and cook uncovered for 12–18 minutes until the sauce thickens and chicken is tender
      • Add salt, sugar, or more curry powder if needed.
  • Finish
      • Squeeze fresh lime juice over dish
      • Garnish with fresh cilantro
      • Serve over rice
