Blueberry I.P.A. “Cavalier Bleu” from Beau’s now available

The final feBREWary beer from Beau’s Brewing, Cavalier Bleu, is tapping this week in Ontario and Québec, and has also been given the nod for wider distribution by the bottle in LCBO and dépanneurs in those provinces. Cavalier Bleu is a hoppy I.P.A. (India Pale Ale) that has taken an adventurously fruity turn, with an intense infusion of organic blueberry juice. Hop aroma and bitterness in this I.P.A. are drawn from four varieties: citrusy Rakau and Nelson-Sauvin from New Zealand, as well as fruity American Azacca and German Mandarina Bavaria.

Certified organic wild-harvested blueberries from nearby Québec were juiced and added to the brew. “Berry flavours are becoming more common in the new hop varieties, which made blueberries a great addition to this hoppy style. We also really liked the colour the berries added,” says Beau’s head brewer, Brian O’Donnell.

Cavalier Bleu pours hazy light brown, with blue and purple undertones and a contrasting white foam. The aroma is a fruit-lover’s buffet of citrus, tropical fruits, and blueberry. The flavour is intensely tangy blueberry, with a tart, dry finish. The Beau’s kitchen’s recommended pairings for this beer include beemster cheese, venison steaks served with a blueberry reduction, and blueberry cheesecake squares.
