Brewer’s Spotlight: Kill Your Idles: Undead Red

Tis’ the season for creativity, silliness, and mischief.  What better way to celebrate those than with our outside of the norm ale, the sweet, tart, fruity and vibrantly colored Kill Your Idles. This time we brewed a truly sinister (looking) beer.  Poured with a deep red hue from heavy amounts of black currant and tart cherry puree; we present to you, Kill Your Idles: UNDEAD RED (lightning strike and evil laughter).

Special effects aside, we crafted this beer as another little experiment.  Nether black currants or cherries have made their way into our popular sour ale and both presented a new challenge; lower pH (ie – higher acidity).  Kill Your Idles was born from a balancing act; trying to create a tart fruited ale without an overly aggressive tartness that would leave the consumer puckering and not enjoying that next sip.  Lactose was introduced as a back-sweetener; a source of body and sweetness that the yeast would leave behind.  While usually remaining conservative in our lactose additions, we wanted to test if it would be necessary for us to add more to compensate for the higher acid fruits.  By adding 25% more lactose, we’ve managed to maintain the balanced sweetness and tartness without over doing the body.  Not to mention, the deep red color certainly seem to fit the time of year.

Pouring with a deep red color like carbonated red wine and a fluffy pale pink head.  The nose explodes with cabernet sauvignon must, grenadine syrup, and a touch of cinnamon stick. Those aromas carry through to the flavor and are accompanied with an intense character of fresh pressed mixed berry juice. Pair with creamy goat cheese and honey, roasted butternut squash and roasted white meats seasoned with herbs de provence or your favorite fun sized chocolate candy.  Come out to our Boo’s and Brews Halloween Party with indie617 this Saturday to get your first taste!  It’s sure to go well with Fat Boyfriend Bakery’s pizza skulls and the fun sized candies we’ll have for pairing.
