Brewer’s Spotlight: Transmutation I

It’s been far too long since we’ve seen a product of our mixed culture program, Funky Town.  While I would normally be apologetic for delays, there is no rushing or scheduling when it comes to releasing quality mixed fermentation beers.  The beer will tell you when it’s ready.  With that said, I’m excited to announce that some of these beers have finally let us know they’re ready to see the world.  It’s my pleasure to introduce the first product coming from our 2018 mixed fermentation tank, Transmutation I farmhouse ale!

With each year, we introduce a new mixed culture to experiment with and see how the yeast and bacteria can evolve over multiple fermentations.  With our first ale, we built a grist of European and American pilsner malts along with raw, malted, and flaked wheat.  The malts provide a simple crackery base beer and the flaked and raw adjuncts give the wild yeast more complex starches, sugars, and proteins to chew on to provide the focus of the flavor.  Just a touch of Hersbruker Mittlefruh and Motueka hops were added to the kettle to provide a bit of citrus peel character but keep the IBUs retrained as to not inhibit the mixed culture we were introducing.  The end result, a farmhouse ale with a pale straw color and fluffy white head.  Aromas of white grape must, fresh flowers and a bit of under-ripe pineapple.  Flavor starts with stone ground crackers, a bit of the white grape carrying though, with coriander spice on the end.  The finish is bone dry with a bright prickle of the carbonation.  A simple and refreshing farmhouse sipper for hot and sunny days.  Snack on this with some young aged cheddar cheese.  For a meal, pair this with grilled white meats seasoned only with a little salt and pepper or a salad of iceberg lettuce garnished with roasted sunflower seeds and clementine slices.

Break out the picnic blanket and share this with friends outside for this one.  This may be one of the last 750mL bottle releases from us for quite sometime.  The reason being, we’re moving to 500mL bottles!  Should make things a little easier for those interested in just enjoying a beer themselves but still enough to share with a friend.  For now, Transmutation I will be on tap in the taproom for on site pours only.  As soon as labels are in (hopefully by the end of this week), bottle sales will begin!
