FeBREWary Week 4: Do No Evil sake lager on tap

February 20, 2018 A beer inspired by the national beverage of Japan, brewed with organic rice and barley, and cold-aged on oak-soaked sake

Tapping this week at 370+ pubs, restaurants and retailers across Ontario and Québec is Do No Evil, a refreshing sake lager brewed for week 4 of Beau’s Brewing’s feBREWary. A beer inspired by the national beverage of Japan, Do No Evil was brewed with organic rice added to the mixture of barley malts, then cold-aged on oak stars that have been soaked in sake.

Sake makes an apt accompaniment to its fellow fermented beverage made from grain. A traditional lager provides a clean background for the subtle fruit and wine-like character imparted by accents of rice and sake. Do No Evil pours brilliant gold with a dense white foam. The aroma expresses white grape, lychee, and cereal grain. The flavour imparts tannin and sweet fruit notes with a firm but balanced bitterness. The finish presents refreshing white pepper notes.

Do No Evil is 6 % ABV, 30 IBUs, and is best served in a pilsner glass at 4-6 C. Beau’s kitchen team recommends pairing with ginger-and-miso poached fish, nukazuke (rice bran pickles), triple cream brie or pecorino cheeses, or a white grape and lychee sorbet.

This new beer will be on tap this week across Ontario and Québec at Beau’s 370+ feBREWary partners – to see a full list, visit beaus.ca/feBREWary. It is also available by the bottle beginning Feb. 22 at the Beau’s brewery in Vankleek Hill, while quantities last. Beau’s month-long feBREWary celebrations will wrap up next week, with the release of Cavalier Bleu, a blueberry I.P.A.
