Halcyon Release Waking Dreams release Mar. 2

March 2, 2018 On Friday March 2, Halcyon Barrel House will be releasing a limited quantity of a new one-off creation called Waking Dreams, a 6.5 % barrel aged sour gold, fermented with organic haskap berries from Granby, Québec.

Last fall they selected four barrels from their stock of young, lightly tart gold beer. which had been aged for three months. To each barrel they added a significant quantity of locally grown organic haskap, a small, dark blue berry. The barrels underwent a secondary fermentation and aging period over the winter, then were blended together for packaging and release this spring.

This beer pours a deep cranberry colour, with light berry-pink foam that dissipates quickly. The aroma is of berries and wine, with a touch of fruit skins. The flavour is tart, with lots of juicy, berry wine character. Plenty of tannins round out the body. The beer finishes dry, with a pleasant, lingering taste of fruit skins.

Waking Dreams wanders the overlapping realm that lies between two alternate states of being: in this case, barrel-aged beer and berry wine. For Halcyon Barrel House, Waking Dreams is an exploration into the unknown.

Says Brewmaster Bryce McBain: “Waking Dreams describes the state between being awake and asleep, where you can experience vivid dreams and hallucinations. I’m intrigued by perception, and some of the Halcyon beer names draw from that.”

Waking Dreams (in 750 ml bottles) will be available at the Beau’s Tap Room in Vankleek Hill, Ont. starting March 2, or if you live in the City of Ottawa you can have it delivered to your door by Bybo.ca. It will also be a guest of honour at the Beau’s St. Patrick’s Party on March 10 in Ottawa, along with Halcyon’s Infinity Mirror, Gravity Well, Shifting Sands Sour Gold, and Shifting Sands: Peach.
