Special recipe at the Silly Blanche

Recipe for 2 people

Fresh coriander

400 gr cod (2 pieces)

8 slices of bacon

Mustard with old
10cl Cream

1 White Silly

2 shallots

300 g sweet potatoes

Spinach palm

Soy sprouts

Asian dressing (soy sauce) , rice vinegar)

Salt / Pepper

Egg yolk

Prepare the ingredients

1 / Salt, pepper the pieces of cod, brush them on one side of mustard with the old one. Roll the pieces of cod in the bacon. Reserve.

2 / Cook the sweet potatoes in a bain-marie for 30 min. Puree the potatoes with a little cream, salt and pepper. Reserve.

3 / Prepare the salad, mix the spinach sprouts with the bean sprouts and Asian dressing and the shallots.

4 / Cook the pieces of cod in a pan. Stain on each side then set aside for 8 min at 100 ° C in the oven.

5 / Prepare the sabayon, cook the egg yolk with a little Blanche de Silly, add a little cream and emulsified to the help of a blender.

6 / Make the salad on the plate, prepare the dumplings to arrange on the plate. Dress the fish. Finish with the emulsified sauce and some fresh coriander.
