Ready to Brew

MAJOR UPDATE… 7 Locks Brewing is now a legal brewery!

We have completed all contracting work on the facility (finally), and passed all requisite final inspections – County, State, and Federal to include WSSC (x2), Boiler (multiple entities), Electrical, Mechanical, Fire Alarm (unexpected last minute requirement), Sprinkler System, and the TTB for our alcohol license. So what this all means is … we can now BREW on our production equipment!

One thing that has become blatantly obvious through this experience is to never expect that something is complete. We did not want to preemptively have all of our ingredients shipped just have them sit on pallets until we were certain we could move forward with using them. So about a week after passing all inspections, we received all ingredients and performed our first yeast propagation this past Thursday.

As excited as we are to brew on the large scale system, it does present it’s own set of challenges. Scaling up a small batch recipe is anything but straightforward, and the challenges of brewing on a large system become very present when trying to implement a new process. An issue with the mill created a very long brew day #1. Suffice it to say, we thought we were set to brew, but a mill issue turned our day into a 13 hour adventure. Fortunately, with each brew, we are identifying process improvements and are continuing to sharpen our skills on the main system.

Our promise is that we will dump any batch that doesn’t meet our quality thresholds and only sell beer that meets our standards. If you’re buying our beer, it needs to be a quality product!
